When my dad's sick...

My dad woke up this morning with a headache, runny nose, fever, sore throat, and a lot of drainage. He called me and being the good daughter that I am, we made a trip to the office on a Sunday. Using Nutrition Response Testing within just a few minutes of taking the supplements his body needed, he no longer had a headache, fever, runny nose or sore throat. I decided to make him my favorite sick food, Chicken and Kale Soup. I hope this soup treats you and your family as well as it does mine. Enjoy!

Dr. Janelle, DC’s  Chicken and Kale Soup

4 T Butter

1 Medium Onion, Chopped

6 Small Carrots, Chopped

4 Stalks Celery, Chopped

2 Cloves Garlic, minced

1lb Chicken, cubed

Salt

Pepper

2 Boxes Chicken Broth

1 Bag Frozen, Chopped, Kale

In a large pot, melt butter. Add in onion. Cook until almost clear. Add in Carrots and Celery. Cook until soft, but not mushy. Once all other vegetables are soft. Before adding the chicken, make sure to salt and pepper it. Then add garlic and chopped chicken. When chicken is brown add in frozen kale and broth. At this point simmer for 10-20 minutes. Make sure chicken is cooked thoroughly. Taste and add salt and pepper if needed.
